  • Culinary creations

    I have really gone overboard with baby food making lately. Work has been brutal, and because I haven't gotten to spend much time with Jack at all (maybe half an hour to an hour Monday through Thursday? ), I've put all my energy into staying up late to make him food. Even though he doesn't know the difference, it makes me feel better to know that I'm still doing something for him! Our freezer is now full of cubes of pureed organic produce. Here is a picture of some of my frozen creations:

    Starting in the back, at the 12 o'clock position, then going clockwise:

    * Steamed sweet potatoes pureed with steamed broccoli florets and a little bit of breast milk
    * Pureed stewed Fuji apple
    * Steamed spinach puree
    * Roasted butternut squash puree
    * Steamed zucchini puree
    * Steamed sweet potato mash
    * And in the center of the plate, a pureed blend of steamed carrot, sweet potatoes and parsnip

    Last night, after I took this picture, I also made a pureed blend of stewed Fuji apples and pears with a pinch of cinnamon. It tasted so great that Johnny requested I make some for us! Jack hasn't had all the foods yet; we are slowly introducing him to different foods, veggies first. So far, he loves sweet potatoes and zucchini. He likes green beans, and he's not a fan of avocado. Then again, neither am I! I'm glad he likes some greens, though. Soon I will be introducing him to spinach, then butternut squash, then apple. Oh, and he loves his oatmeal. He'll just gobble that stuff up. Like mother, like son! Tonight he is having zucchini mixed with sweet potato. Mmmm.

    Speaking of culinary creations, lately I've been cooking a lot, too. It's been after work and after Jack goes to bed, so it's a very late dinner, but recently Johnny and I bought this cookbook with health-conscious recipes. It uses full-fat butters and stuff, but in moderation, and really emphasizes bringing out the natural good flavors of veggies, fruit and meat. It doesn't cut carbs, but each recipe comes with a picture and the calorie count per serving. I was surprised to find that every recipe I've made so far is really delicious, especially since I have really high standards when it comes to food. Last night, I made a basque-style chicken breast, with diced tomatoes, bell peppers, onions, paprika, cayenne pepper and oregano; the other night, it was turkey Italian sausage with polenta, tomato sauce, peppers and garlic. I've also made a Manhattan clam chowder from the book. It's been good inspiration; there are only so many healthy dishes in my arsenal! Usually we have a main dish with two veggies for dinner, and we're full ... and it usually only "costs" us about 400 calories! A long time ago, Johnny told me (during one of my unwarranted pre-baby "I have to lose weight" phases) that calorie-counting was really made for a control freak like me. I didn't believe him, but it turns out he was right. I love food, and this way I can eat what I want but keep tabs on everything. We started this three weeks ago, and now I'm only three pounds away from my goal weight. I'm actually seven pounds lighter than I was in mid-December. I never thought it could go so fast; I've been stalling since I lost the initial huge amount of weight postpartum, but since I was at a normal weight anyway, it was hard to lose the last few pounds. Now I'm almost there, yay! My old work pants now button up without creating a muffin top.

    I do think weaning has made a difference, too. I weaned Jack on his six-month birthday. It was getting too time-consuming to pump at work. I'd get paged all the time, and we don't have a lactation room at work (or offices with locked doors), so it was nerve-wracking. Plus in my line of work, sometimes you really can't take 15 minutes away (especially if you want to leave by 5 p.m.!). Jack was also getting so hungry it was hard to keep up with him, and it was stressing me out rather than making me feel good about mothering. Six months was always my short-term goal, so I decided to call it quits and pack "the girls" away. I'll take 'em out again for the next baby. Although weaning was very physically uncomfortable for me, I have never been so happy to see my small boobs  back! I will never complain about being flat-chested again. It's the way to go. Anyway, I think my body was hanging on to extra fat to make milk, because as soon as I stopped, losing weight became much easier, especially combined with working out 3 times a week (after Jack is in bed) and the calorie counting. Soon enough I will have my former fabulous self back ... yesterday I was hit on in the grocery store, a first since Jack's been born. It made me giggle -- I think the guy must have been June's age!

    Tomorrow this cutie pie takes his first flight ... we are heading to Louisiana for Johnny's mom's 60th birthday celebration and family reunion! I'll update with lots of pics when I'm back.

    Thats awesome that you make him food! I wish I did that, I think Kailyn would be eating more veggies. She will only eat veggies if I hide it in her food. She actually KNOWS what a carrot looks like. Yeah..not good! She eats a lot of soup, bc she can't taste the veggies under the broth. lol. I know..I'm sneaky! Anyway, he is so cute! Have fun going out of town! Be safe! =D

    So no head shaving yet huh?  I thought it was at 6 months when you do it?  Did I remember wrong?

    congrats on the weight loss...you were fabulous before anyways:)  And I know how you feel about getting hit on...its stilll flattering even if you are taken.  I had a guy at Old Navy asked me where I go to college...I was like, oh I'm done.  And silently to myself (like 6.5 years ago!)

  • ryc - the girls are 6 & 8... I think we came at the PERFECT age. It's still quite magical and they were tall enough to ride MOST of the rides and not need naps. :)

  • Your culinary creations look so yummy! You're so creative picking out all those veggie combinations. I think Jack will be pleased with the variety. I love sweet potatoes. And of course Jack is so, so CUTE! He really is and he looks like such a happy baby! Keep up the good work mommy! :o )

  • Look at all that hair! He looks so handsome! The Fuji apple puree sounds delicious. Have you tried to feed him apple puree oatmeal? Last weekend I went to a diner and had an apple cherry oatmeal. Yum! I thought of Jack and how maybe we could share an oatmeal meal together when I finally get to see him. =) I'm so amazed that you are cooking so much, losing weight, working, and taking care of Jack! You are like supermom incarnate... although at times I feel that all moms are amazing in that way! Anyway, I just submitted an application for UCLA, will let you know if I hear from them about an interview.

  • Looks so yummy. Jack is so lucky to have a mommy who makes organic foods for him. You have to post pictures of the foods. It's making me sooo hungry!!! :) I will definitely look back in your post to get some recommendation on baby foods. I think my ped is going to give me the ok to start solids next month. Jack is looking more handsome each day. Oh and you have to give me tips on how to travel with an infant. I'm planning a trip next month and I'm just clueless. It'll be interesting with just Sophie and I.

  • Jack's hair cracks me up!  It really is adorable!  Your food sounds great.  I gave Rylan broccoli last night and it was a bit too thick for him.  I need to add more water to my food processor when I make certain things.  Did green beans come out thick?  I have already weaned Rylan.  I didn't want to but like you, when I went back to work it was really stressful.  I too was glad to have my small boobs back ;)

  • What a lovely post to read on a Friday morning over my cup of tea with raisin bread with cream cheese (makes me feel bad eating that when you're talking about counting calories).

    When I first saw that plate, I thought it was gum drops! They look so yummy it makes me want to gobble them up. Interesting little pureed concoctions you have there, Jack is really going to get his variety of foods, parsnips and zucchini -- oh my!

    I love the first pict of him in his highchair, his scruffy hair is too cute! Hope you have a great trip to Louisiana, cant wait to hear about how 'well behaved' Jack was be on the flight!

  • Have fun on your trip to Louisiana!! Neither of my kids have taken their first flight yet, though Emilee did take a train trip when she was only 2 weeks old (it was cheaper to take the train to my mom's than to have someone drive us).

    Thanks for the advice on the baby food pureeing. So far I'm just basically pureeing them and scooping them from the food processor directly into the ziploc bags (I use the "snack size"). I usually just add it to his cereal; rarely does he get it straight (though we did use jarred baby food the other day and he really enjoyed the corn). I guess it's probably weird that I put veggies in his cereal, but he seems to like them (all but the carrots; but he's not a huge fan of "orange" foods).

    I'm glad that you found a good cookbook that you like... I'm picky about foods, too. I think that if it doesn't taste good, I don't want to eat it (and a lot of the things that I like to eat are unfortunately, high in calories/fat). But I did discover that seasonings can do WONDERS for your food. I also am a big believer in the whole Weight Watchers system, which really allows you to eat what you want -- just in moderation. Today for breakfast I had an egg white omelette (sp?) with salsa and shredded 75% reduced fat cheese (Cabot is the brand that makes this; they come from Vermont). It was really good and it was all the onions, peppers and tomatoes in the salsa that made it so good, and I feel really full right now. It's all about making good choices, and I'm glad that you've found a way to make good choices in your diet. And yay for working out after Jack goes to bed. I do that, too. I tape these workouts from Fit TV and do 30 minute sessions about 4-5 times a week (since obviously I have way more weight to lose than you do). :)

    OMG... no one ever told me about the big boobies that I would have while BFing. I'm glad yours went back to normal. I think mine have stayed where they were all during pregnancy and BFing, b/c of the BC I'm on. I wish they would go back to "normal". And 6 months is a long time to BF... I'm glad that you made it to that mile mark. Weaning is uncomfortable, but you have to do what you have to do to be the best mother you can.

  • Oh girl it WAS funny! What I DIDN'T share was the pictures of the whole rap group flipping off the camera. LOL. Nathan and I couldn't make eye contact the whole shoot or both of us would have cracked up!

    That's so neat you are making your own baby food! You go girl - and cooking healthier for yourself. Way to start 2008! And Jack is the cutest baby, like, ever....just so you know, I'm in love with all of his pictures. I can't believe he's 6 months old ALREADY!

  • I laughing my butt off at the last picture when I read that you were leaving for Louisiana and just want to say SHIT, SHIT, SHIT b/c I forgot to rework Jack's hat and booties for the trip.  :(   I will kick myself for this.  I guess I just need to frog the idea totally and see about making him something totally different.  :P   I wanna kick myself so hard right now! UGH!
    Oh, Chris said that your baby food looks like...baby food!  LOL!  But it did get his full attention when I mentioned that you used the Magic Bullet b/c he has been wanting one ever since they came out.  He looked at me like, "Hmm, if we have another kid and I let her make baby food...I get a Magic Bullet.  It could work!"  :P
    And I think you are silly about the 'flat chested' topic.  :D   LOL!  I know that being a 36C isn't really flat chested, but I wish that I had the girls back sometimes.  :P   I was like a 38D with those babies.  Only issue was that a lot of my button up shirts didn't fit.  LMAO!

  • RYC- I didn't find that sweet potatoes were too bad.  I roasted them with the butternut squash and scooped the flesh out before I pureed it.  I use a food processor, not a blender...whch do you use?  Thanks for the tip about the green beans.  Maybe I need to steam the broccoli a little more.  I just don't want to oversteam because I want to try to keep all the nutrients in there for Rylan. 

    Hope your flight to Louisiana went well.  I think that Rob & I might go to Jazzfest this year.  I really want to take a swamp tour :)

    I've started working out the last week or so. I strap Tierney into the Snugli and do aerobic workouts. It's not my hard core circuit training that I was doing before I got pregnant, but I guess it's not too bad since Tierney is only 4 weeks old. I can fit into all my old jeans, though I'm still about 5 pounds away from my pre-pregnancy weight, and my abs are certainly on the jiggly side. Hopefully they'll go back to looking somewhat normal by summer. I'd like to actually feel good about wearing a swimsuit this year, since I was pregnant last summer.
